Almond portabella - Agaricus blazei. Better known for its medicinal properties. Used to enhance the immune system and to regulate the blood pressure. anti-tumor, cardiovascular and cholesterol controlling properties. Shimeji - Hypsizygus tessulatus. Shimeji is a small mushroom with light brown or white umbrella-shaped caps.  They are firm and crunchy in texture and they have a delicate, mild, sweet flavor. Excellent in soups, stews, sauces and stir-fried dishes. Shiitake - Lentinula edodes. Traditional, nutritious delicacy in oriental foods and a gourmet mushroom in the Americas.  Its pleasant aroma gives it the Chinese name of Porcini - Boletus edulis. his wild mushroom is one of the best edible fungi.  It has a mild and delicious flavor.  Excellent in soups, sauces and grilled.  Its stipe is bulbous, thick and fleshy, white to brownish in color.  The cap is broadly rounded, yellow-brown in color possessing pores instead of gills. Morel - Morchella esculenta. The morel has a honeycomb-like conical cap that ranges in color from tan to yellow to black.  The stipe is hollow, short and thick.  This wild mushroom is consumed cooked in soups and sauces, or baked and stuffed.  It is widely used in French quisine.
